Meet Brian Birdy and David Smith, co-founders of Full Circle Roasters in Dublin in 2014.
Birdy, himself a Monaghan man, has roots in microroasting coffee in his parents garage in Carrickmacross. He first started learning about speciality coffee in Belgium, landing himself a job in the Antwerp’s Cafenation.
Returning to Ireland, he worked with 3FE and later Vice Coffee Inc, both key players in Ireland’s coffee scene. Having completely mastered his craft, he started his own enterprise in 2014. It was at this point he felt like his life had come ‘Full Circle’, and there was a whole new set of skills to learn.
“Or as TS Elliot put it, ‘We shall not cease exploration, and the end of all our exploring will be to arrive where we started and know the place for the first time.”
David Smyth, owner of Ebb and Flow is the other half of the duo. Smyth worked as a civil engineer until the 2008 recession hit and gave him an excuse to do something he had always wanted to do – open up his own business. While studying for a Master’s in Business Management, he started getting into specialty coffee at home, making brews for family and friends for fun. An opportunity presented itself to take over the space in front of a hair salon called Salon 56 on the Clontarf Road, and in August 2015 he opened Ebb & Flow.
The team roast only the freshest, specialty grade beans of the season, and supply to cafes across Dublin and Ireland. Full consultancy and in-depth barista training is provided for wholesale customers.
Nat Grabowska is Full Circle head roaster and she has been with the roastery for just over two years and has been working in specialty coffee for 4 years! Nat has an unbelievable passion for coffee and it shines through when you drink Full Circle coffee!
Dublin’s venues carrying FC include Shoe Lane on Tara St and Dun Laoghaire, cracked nut, and of course Ebb and Flow, in Clontarf. Outside of the capital, you’ll find them at Act One of Newbridge and Hugo’s in Slane, amongst others. Dave recently opened Milagram coffee based in Sligo and Brian is in the process of opening a cafe in his beloved Carrickmacross! It's all go for them!
The guys have also just recently launched their very own Full Circle Roastery Shop right at the top of Camden street to showcase their great talents in Dublin. You can stop by during the weekends to pick up yourself a coffee and view the roastery!
